Sinopsis

En la actualidad, uno de los objetivos en la producción avícola es mejorar la calidad de la carne de pollo a través de estrategias nutricionales. En este contexto, la pigmentación de la piel y la carne del pollo emerge como uno de los atributos más críticos, dado que representa la primera impresión sensorial relacionada con calidad nutricional y los posibles beneficios para la salud percibidos por los consumidores.

Aunque la pigmentación no siempre es un indicador confiable de seguridad y calidad desde un punto de vista técnico, la percepción del consumidor sobre este atributo influye significativamente en la aceptabilidad del producto y en su decisión de compra, convirtiéndolo en un factor económico importante para los productores.

En Ecuador, existen preferencias por un color de piel amarillo vibrante y uniforme como indicador de frescura, seguridad y valor nutritivo. Esta preferencia ha impulsado a la industria de piensos a buscar métodos eficaces para lograr el color deseado, siendo los pigmentos una solución clave. Tradicionalmente, se utilizan pigmentos sintéticos debido a su eficacia y bajo costo. Sin embargo, su uso ha sido cuestionado debido a sus efectos adversos sobre la salud y el medio ambiente.

En contraste, los pigmentos naturales, derivados de fuentes como el maíz amarillo, la alfalfa y la flor de caléndula, ofrecen una alternativa más segura y ecológica. Aunque, pueden ser más costosos y menos estables, su uso ofrece múltiples beneficios. En términos de salud, estos pigmentos no presentan riesgos tóxicos y son fácilmente metabolizados por los pollos, lo cual es importante para mantener la salud del consumidor final. Desde una perspectiva de sostenibilidad, los pigmentos naturales son biodegradables y su producción generalmente tiene un menor impacto ambiental.  

Por ello, este libro tiene un doble objetivo, en primer lugar, proporcionar una comprensión de tres pigmentos naturales que pueden ser utilizados en la producción avícola, detallando sus características, propiedades y beneficios tanto en términos de coloración como de salud de las aves. En segundo lugar, busca ofrecer una guía práctica para su implementación en la producción de pollos de piel amarilla, basada en estudios y experiencias exitosas.
